Bombay Pizza Kitchen, owned by Indian-American husband and wife duo, Ashok & Divija Penmetsa, along with a close group of friends, has opened in Eden Prairie. The concept was developed in partnership with the Parasole Consulting Group. Yellow Dog Studio and Dering Pierson Group provided conceptual architectural guidance. The restaurant has an array of appetizers, pizzas and other options with signature flavors rooted in regions within the Indian subcontinent. Pizza flavors include Bombay Butter Masala, Calcutta Chilli and Pune Pav Bhaji.
The third La Michoacana Purépecha shop—owned by Ricardo Hernandez and Jazmin Hernández Martinez—has opened at 809 Seventh St. E. in St. Paul. The shop offers an authentic, original experience of traditional Mexican La Michoacana shops. On the menu is 50+ popsicle and 30+ ice cream flavors, exclusive fruit yogurts, fruit cups and Mexican snacks. The first La Michoacana Purépecha is located on 701 Lake St. E. and the second is in the Midtown Global Market at 920 E. Lake Street, both in Minneapolis.
Pajarito, the upscale Mexican restaurant on West Seventh in St. Paul, has opened a second location, in the 50th and France retail area in Edina. Previously the space was inhabited by Moderne Kouzina, a short-lived French concept, and Mozza Mia, an Italian restaurant. Pajarito, which means little bird in Spanish, is owned by Chefs Stephan Hesse and Tyge Nelson.
Central N.E. has opened in the space previously occupied by The Bad Waitress on Central Avenue in Northeast Minneapolis. The restaurant is a partnership between Morrissey Hospitality and Mary and Andy Cohen. The Cohens are the owners of Bad Waitress on East 26th Street in Minneapolis.
After running a pop-up at Tony Jaros Rivergarden in Northeast Minneapolis and opening inside Rosedale's Center's Potluck Food Hall, Burger Dive owners Josh Thoma, Kevin Fitzgerald and Nick O’Leary opened their first stand-alone Burger Dive. Located in the former Bay Street Grill at 731 Randolph Ave. in the West 7th neighborhood of St. Paul, Bay Street Burger Dive opened in mid-August. Like any good dive bar, guests can expect to find pull tabs, weekly meat raffles and trivia. The kitchen, open daily from 8 a.m. to 10 p.m., is run by O’Leary. The menu includes a variety of breakfast items and features biscuits from Betty & Earl’s Biscuit Kitchen, also at Potluck.
