Lexington Opens Its Rooftop/Greenhouse Lettuce

The newly opened 60-seat patio at The Lexington, complete with its own kitchen and bar.

With its rooftop and upstairs event space now open, The Lexington brings some Polynesian flare to St. Paul courtesy of Executive Chef Jack Riebel. The two areas also help complete the full Lexington remodel underway since Riebel, along with Josh Thoma and Kevin Fitzgerald of Smack Shack, purchased the 82-year-old restaurant in 2014. They’ve since put about $5 million into the renovation, making the additional 60 rooftop seats and ability to host for second-floor events important revenue generators. 

Presenting a plate of fried orange honey chili chicken wings is Jack Riebel, The Lexington’s executive chef and co-owner.

Riebel’s rooftop bar menu includes orange honey chili chicken wings, a Hawaiian spiced ham burger and malasadas—Portuguese donuts—plus tiki drinks such as the Crocus Grog with light and dark rums, lime honey and passion fruit. 

New to The Lexington team is events director Karen Scher, most recently the director of catering for the Guthrie Theatre and Sea Change restaurant. 

Oh Boy, greenhouse lettuce

The group behind Bushel Boy Tomatoes has broken ground in Medford, Minnesota, on Revol Greens, a greenhouse operation with the capability to supply Midwest grocers and restaurants with locally grown lettuce year round. The first crop is schedule to appear in Twin Cities grocery stores in December. 

The greenhouse model taps into the latest technology, as well as sustainable growing practices. It uses a fraction of the water consumed in traditional growing and will capture most of its water from rain and snowmelt from its roof. LED lighting will supplement natural light during the winter. 

Revol Greens partners include Jay Johnson, former owner of Bushel Boy Farms. Johnson sold Bushel Boy in 2011.

His new leadership team includes former Bushel Boy execs, Marco de Bruin and Steve Amundson, along with Marc Vergeldt, a greenhouse crop consultant, and Brendon Krieg, a former greenhouse produce buyer for Target.

Revol will offer several varieties, including spinach, mixed greens and romaine, all grown without pesticides or herbicides. Close proximity also cuts down on the travel time of the lettuce to shelves.
